When L.A. Tenorio came to Dexter’s and told us about the theme of his son Santi’s first birthday, we immediately felt excited.
His “Avengers”-themed party needed a cake that was just as heroic, bold and modern. To capture these qualities on a cake, we immediately thought of the iconic Stark Tower, and started constructing it from sugar. From there, Dexter’s Bakeshop added a sense of adventure to the cake by putting in hand-painted portraits of Iron Man, Captain America and Thor. Miniature versions of these heroes were also added to delight Santi.
Santi’s 1st birthday cake
As planned, the cake was a visual treat that excited the birthday boy, his family and his guests. And Dexter’s would like to thank L.A. for letting us create this heroic masterpiece for his little hero.
Last March 16, 2013, Manila welcomed the game changer in the entertainment industry – Solaire Resort and Casino. As they opened their grand doors to the public, people were in awe at the magnificence of this new entertainment destination.
To match this grand opening, Dexter’s Bakeshop was commissioned to create 4 grand cakes for the occasion. Solaire envisioned the cakes to be unique, modern and opulent, which became the springboard for these creations.

During the recently concluded 6th National Food Showdown, some of the country’s culinary greats were honored during the 2-day competition. The theme for 2012 was “Showcasing Culinary Heroes,” and part of the event was a tribute to some of the greatest names in the culinary world, including Dexter Rebolledo, who was hailed for his contribution and innovation in the baking industry.
Through an Audio-Visual presentation, his life and achievements were introduced to the new generation of chefs and bakers. From his humble beginnings to his education at the Wilton School of Cake Decorating and Confectionery Art, to his bakeshops in Cubao and Asia, it was truly a celebration of Dexter Rebolledo’s genius.
Here’s how the video described him:
“Dexter Rebolledo was self-taught in the art of baking and cake design. But his talent enabled him to work with the Lutz’s Continental Pastry Shop and at the Wilton School of Cake Decorating and Confectionery Art, both in Chicago, the first Asian to do so. While most cakes at the time used boiled sugar as icing, Dexter’s innovated by using gum paste and his cake design creativity was acknowledged in a Wilton book that featured his use of gum paste panels lighted within.
He opened his first Dexter’s Bakeshop in his hometown of Bulacan then went on to Cubao. He also opened bakeshops in Asian countries like Malaysia. Yet perhaps his greatest contribution is teaching his children this fine art of sugarcraft. After their father died, they not only carried on the business but won gold medals in wedding cake design in culinary competitions.
Dexter Rebolledo, culinary hero.”
On hand to receive this recognition was Mrs. Josefina Rebolledo and the rest of the Rebolledo family.
Last August 25 and 26, Dexter’s Bakeshop joined some of the country’s leading wedding suppliers at the Marriott Hotel for “Marry Me at Marriott: A Grand Wedding Fair.” The 2-day event was well attended by soon-to-be-married couples who were looking for creative and grand ideas to celebrate their wedding.
At the Dexter’s Bakeshop booth, visitors were treated to a visual spectacle as 4 of our latest and most innovative designs went on display. Couples were in awe at “The Leaning Tower of Pisa,” a sugar masterpiece which depicted a couple having fun at one of Italy’s best known landmarks. Another popular design was “The Chic Couple,” which featured an impeccably dressed bride and groom – all made of sugar. Visitors couldn’t help but take photos of these one-of-a-kind wedding creations.
Equally popular were the “Stencil” and “Garland of Roses” cake designs. These were popular with couples who wanted something simple and elegant for their celebration.
This wedding fair at the Marriott was a perfect venue for us to showcase our new designs and highlight our classic ones. It was also a great opportunity for us to meet couples and show them all the creative possibilities for their wedding cakes, made especially for their celebration by Dexter’s Bakeshop.
